"What to do. I'm Lawrence Holmes and I'm here in front of my rib shack, Big Papi's, in beautiful North Hollywood California. And on behalf of Expert Village, I'm going to teach you how to prepare, smoke and barbeque you some sausages. So you know, what we talk about how to, we talking about how to prepare sausages and everything. Me, you know, I'm a good ole smoking guy. You know they used to call me Smokey back in the days for various reasons. We ain't going to talk about that. However, you know when you're smoking sausages you going to get that little, little strong kind-of continuity that consists and combusts in the sausage to make a little squirt that everybody is looking for when they're doing their sausage. There's other ways that you can do sausage. Lot of people when you first begin into barbeque they realize these smoked sausages are already smoked but some people like to smoke them better and more. But they're actually done. So you just cut them in half like we did in the kitchen, bam do them all like that, so they make sure they're done when they're done. Or some people just like to do a little slice technique. Yes, see go on in there. Regardless, I like to cook these already cooked sausages at a high heat and then you move you them to the side, just let them sit there and absorb some more flavor. But the main reason why I like to smoke my sausage is the reward that you get at the end. See you can cut them all open and slice them open. When you smoke them you get that little juicy reward, here."
