I?m going to teach you how to prepare smoke, and bar-b-que you some sausages. Now were going to talk about types of woods. It?s a lot of debates about wood. What is and what?s not good. See wood varies from region to region or taste to taste. Sometimes it comes into what you are going to cook that day and how it?s going to taste. Me myself I?m a big fan of oak, I?m also a big fan of mesquite. Being that my daddy from Louisiana hey we just mix then together because everything is a big gumbo when you cooking Louisiana style. There's also cherry and other fruit woods, apple, pecan and all types of foods you could use. Oak is probably number one through most regions. Mesquite is huge."
