"Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, TX. On behalf of Expert Village I'm here to show you a steak and creole gravy recipe. Now our mixture is at a boil here and it's starting to thicken up. It's at this point we want to give it that creole look and what we are going to do is use that tomato paste, just a little. Cause we don't really want the tomato flavor so much as we do as much as that reddish color that we will get from that, just a hint of tomato. I'll mix that in and when you do this you'll notice that it does it starts to get a red hue about it. Like I said it will give just a hint of tomato flavor, turn the heat down just a little bit. You prepped a lot of things but it's important to put them back in in layers cause you don't want to put things in that is going to be in there to long cooking and you loose sight of what it actually is, it cooks to long. So we got our tomato paste in we're going to turn the heat down a little more, let this cook for a couple of minutes, I'll see you back at the next step."
