"Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, TX. On behalf of Expert Village I'm here to show you a steak and creole gravy recipe. Let's look at the ingredients that we are going to need to prepare this dish. Of course we are going to need some steak and this time we are going to use some fresh steak nothing in the fridge that we had cooked earlier this week. We are going to use some herbs in this dish, we are going to use some thyme, sage a little rosemary. We are going to do a mirepoix which is bell pepper, onion and carrot but we are also going to add some celery to that so I call it a mirepoix plus. I guess you can call it a holy trinity plus either way some peppers for some heat. I always have to have a little heat. Some garlic, mushrooms, a little fresh parsley, we have a little flour, oil to make our roux to create our gravy. A little tomato paste just to give it a tang of red and that little hint of tomato flavor that is what makes it creole. We are going to use some beef broth, we are going to season and marinate our steak with a little rice wine vinegar, Worcestershire. Then our basic seasonings that we are going to use which is black pepper, kosher salt, garlic powder, creole seasonings you can buy that in your grocery store, some ground red pepper (cayenne) some onion powder. So these are the items we are going to need to do this recipe, let us get started."
