"Now we're talking about the vegetables that can go in your curry. Again like I said before one of the things about quick Thai curry is there's no rules. When it comes to the vegetables in quick Thai curry, same thing holds. There's no rules. It's whatever you and your family happen to like. You can go with peppers. Today I have a mix of red, yellow and orange peppers. You can add carrot, onions, snow peas, garlic. These are bean sprouts. You can also add potato if you want to go with a vegetable curry that you could season up either with your cumin or coriander. Tofu can also be added again with your cumin or coriander if you give it a little more flavor. You can add broccoli, cauliflower, basically any vegetable that you enjoy. Zucchini, summer squash. Anything you want. Julienne it like I have here. It's a quick prep. You can buy many of these already prepped in your grocery store. Already julienned, if you don't want to take the time to slice them up yourselves. The beauty of curry is anything goes, any flavor. You can mix and match and have a different curry every day of the week if you want to just by varying the vegetables that you're using with your curries. So as I said today we're going to focus on using our bean sprouts ,pepper, carrots, snow peas, our onions and we'll also add a can of our mixed stir fry vegetables, which have our water chestnuts, bamboo shoots and also the straw mushrooms.
