"Hi, Bill Lyons here for Expert Village talking again tonight about our quick Thai curry. Now we're on to how we're going to cook our curry today. There's a couple of different ways you can cook it. If you haven't made the investment in a wok, you can use a shallow open pan. It's important that you have a pan with plenty of surface area to work with. Something relatively deep, because you're going to be stirring quite a bit. You want to make sure that you have enough wall on the side of your pot, that when you are stirring, you're not flipping it on top of your stove. I happen to have a smooth top stove, so that's not such a big deal. But for those of you with a regular burner or element type stove, that's going to be a problem. You can use this. Preference is a wok. A wok is basically a deep pot. It's an oriental style cooking pot. They come in different varieties. This particular one that I have here is meant to go on top of a plain cook top stove. There's also a version that's available that's an electric wok. Basically what you have with the wok is a small area that you do your cooking on. And as you stir your food, you're moving it up to the walls of the pot so that you can mix everything in and blend all your flavors and get nice, even cooking. So remember with your wok the surface area that you're cooking on is this small area here. That's where your heat is concentrated, so it's important that you work with one or two wooden spoons and you keep moving your food quickly and rapidly so that it doesn't all get hot in the middle and cold on the outsides.
