"Hi, Bill Lyons here for Expert Village and tonight we're talking about quick Thai curry. Quick Thai curry is kind of an easy, light, make it as you go type meal. One of the beauties of quick Thai curry is there's no rules. Basic ingredient is coconut milk and any kind of vegetable, meat, tofu or straight vegetable that you want. The beauty of quick Thai curry is you can have any combination of meat, vegetable or if you want to go vegetarian, strictly vegetable or if you want to go vegan, you can use tofu instead of meat products. So you can mix and match any way you want. You can have pork curry, chicken curry, seafood curry, shrimp curry, basically anyway that you want to have curry. Many of us here in North America think of curry as being hot and spicy. That's not really true. The thing that you have to remember about curry is that curry is a flavor. Curry is a mix of different ingredients. Coriander, cumin, peppers and other spices. The basic thing about curry is that it's a flavor. You have West Indian curry which is curry from the Caribbean. Then you have East Indian curry, which is the curry that you have in India which is a little more pungent. And then we have Thai curry. Thai curry is a little more subtle, a little softer on the palate. The basic ingredient with Thai curry that's different from all the others, is coconut milk. Coconut milk balances out the curry, makes it a soft and gentle flavor and then with the curry, you can add different flavors. And we'll come back in just a minute and talk about the different flavors of curry that are available."
