"Hi! My name is Karl James, owner of Creolesoul Catering located in Round Rock, Texas and on behalf of Expert Village, I am here to show you a deep dish biscuit crust pizza. Now we are going to start the basis we are going to use on our sauce that we are going to use on our deep dish pizza. We are browning some ground beef here and we are also going to put some of that seasoning mixture that we made earlier. So I like to really work this ground beef and I like it broken down into small pieces. I know when my mom used to do this and she does this even to this day, when using ground beef, she likes these bigger pieces except me, small. So we will work this around and get this seasoned and all broken down. Once we get it to where we want, I am going to drain off some of the fat. The leaner the ground beef, the less fat you are going to have once you brown it but I don't like using the ground sirloin to this because it is a bit too dry and it really doesn't take much once you brown it. Drain off some of the fat but that is where a lot of the flavor is in the meat is in the fat. So we will continue to work on our ground beef, break it up, get all that seasoning mixed in, no more red coloring and we will move on to our next step."
