"Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, Tx and on behalf of Expert Village I'm here to show you a creole shrimp sausage recipe. Now that we've cleaned our shrimp were going to take our shrimp out and basically were just going to cut them in half like so, cause were going to add this in with our pork. Now were going to start to get our shrimp cut we'll start building our sausage mixture and which I like to do step by step. It increases the flavors and get things really mix by hand before you start sending them through the grinder. So were basically taking our shrimp and cutting them in half just so that once we get to grinding they'll fit in the grinder just like the pork will and everything else. If you use smaller shrimp I mean you can just put them in right like that like the salad shrimp. But were just cutting them in half so that like I said once we get all of this mixed together it will be easy to go through the grinder. So we'll continue to cut our shrimp here add them to our country style pork rib meat here and I'll see you back at the next step."
