"Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, Tx and on behalf of Expert Village I'm here to show you a creole shrimp sausage recipe. Now it's time to prep our shrimp and what were going to do is were going to peel the shell off and clean the shrimps. But we start by peeling off the shell simple enough then what were going to do is make a slit right down the back and then there's a vein in here that we want to remove. And that's basically the intestine track of the shrimp so you remove the vein out and we'll do it again we'll try one more. Peel the shell off, and they come right off and we'll take our knife right along the back, as we split it we take that vein out. Anyway we continue to do that with our shrimp continue to peel and clean them and see you back at the next step."
