    "Hi my name is Karl James, owner of Creolesoul Catering located in Round Rock, Texas and on behalf of Expert Village I'm here to show you a creole shrimp sausage recipe. Okay now we are going to look to cut our pork that we are going to use. This is going to help by holding our shrimp together so we are going to add a little pork. And what we are using boneless country style ribs, we are using that cut because I like the fat content of it. Anyway we are going to cut those into one inch cubes and like I said we want that fat. It keeps the sausage from drying out and the pork would help bind the shrimp together. I mention earlier you can leave the pork out all together and just basically use the egg white. Sometime in the near future I would actually do a seafood sausage and that would have no pork it would be all seafood, fish, and crab and shrimp, maybe some scallops and then we would use egg whites to bind it. But with this sausage we want the pork. So we got this cut into our one inch cubes and we would toss it into our bowl here and move on to our next step. "
