"Hi my name is Karl James owner of Cresolesoul Catering located in Round Rock, Tx and on behalf of Expert Village I'm here to show you how to make Boudin. Okay let's work on another layer of our heat for our boudin and this time we're going to chop up some red chilies. So I'm using red dry chilies I'm just rough chopping those yes we're going to use the seeds and all, you can you know buy the red chilies flakes if you want already chopped. But I like playing with the pepper and with the red chilies I really make those to fine but this is going to add to our layers of heat which we have the cayenne and the seasoning mix. We did the Cajun spices also in the seasoning mix and we did Serrano's and know we have our red chilies, so this is another layer of heat to our boudin. Once again if you don't want them hot you can drop off all the pepper you use less pepper it's up to you, anyway here's the chopped for our chilies let's move on. "
