"Hi my name is Karl James owner of Creolesoul catering and on behalf of Expert Village I'm here to show you a simple chicken and sausage gumbo. Okay let's look at our seasoning mix for the gumbo. One of things about gumbo is that it is a receipt that really takes a lot of instinct and it comes from your heart. When you are measuring your seasonings it is all about feel and that so that is what I do. Anyway we are going to start with black pepper, some garlic salt, a little garlic powder, some onion powder, some ground red pepper for little heat just a little. Okay that is more then a little. And then 2 of my little secret ingredients not going to tell what these are but I will tell you that you can substitute this by using any type of creole seasonings that you can by at your local grocery store and it would give you the same basic effect. You can do it from one container where I have to use 2. Something else that I'm going to add to the seasoning and most people would save this to the end and put it into the gumbo by I like to add at least a teaspoon of file in my gumbo to at least to my seasonings. So we got our seasonings in here so we use a little fork and mix all this together there you have it our seasonings are mixed for our gumbo."
