"Hi! My name is Karl James and on behalf of expertvillage.com, I am going to continue on with our catfish Courtbouillon recipe. Okay, we've cut up our Holy Trinity, which once again is the onions, bell pepper and the celery and now we've got about 2 tablespoons of vegetable oil heating here in our pot, our nice iron pot, nice iron dutch oven. We are going to add that to it. Be careful because it is hot. It may splatter. We are going to sweat our vegetables and our onions still translucent. Greens have a lot of sweetness in these. Like I say we'll sautee these on a medium heat. It will take us about maybe 2 to 3 minutes to get them just where we want. I like to keep things moving so they don't burn anything. Like I said its on a medium heat. By sweating these vegetables, the onions once you start to sweat them this way, they start to get really sweet. The other thing we like to do with this is we are going to do this whole entire recipe in one pot which makes for easy clean-up. "
