"Hi! My name is Karl James and on behalf of expertvillage.com, I am going to continue sharing with you this Catfish Courtbouillon recipe. We are completing the last item for our Holy Trinity. Let's rinse it a little bit and we are going to go ahead and chop that up. I like to take the celery rib and I cut it in half, take 2 and make 4, like that and then we can start giving it small dices and once again, like I said if you noticed my fingers on this hand, they are rolled back. That way when you are chopping you don't risk cutting off a finger tip. Keeping your finger tips is always a good tip in cooking so we will finish cutting our celery and we will add our third item in our Holy Trinity which is the onions, bell peppers and celery. "
