"Hi my name is Karl James owner of Creolesoul catering located in Round Rock, Texas and on behalf of Expert Village I'm here to show you how to make hot links. Okay we are using a pork shoulder like I said you can use a pork butt but we are going to try cutting this awfully big piece of meat into some smaller sizes. Plus it's on a bone here so we want to get rid of that and we just want to cut off the bones so. Here is the bone so we are going to work our way around. You know you can have your butcher do this just cut it or you can buy boneless a boneless roast and you wouldn't have to go through this cutting. There is a bone that is actually going right down the middle here and it makes a turn right here. But just think if you had is all cut up already and it was boneless you would be missing out in all this fun. "
