"Hi, I'm Jennifer Cail. On behalf of Expert Village I'm going to show you how to make potato latkes for Hanukkah dinner. Now that our potatoes are drained and they are a lot drier than what they were before it's time to start mixing some other ingredients. This is where you are really going to get your hands dirty. So first is to add the eggs, I got about 2 pounds of potatoes here so I'm going to add two eggs and see how that works. Depending on the size of your potatoes and the size of your eggs and various other conditions you can take more or less maybe you might only need one egg, this time maybe you might need three. Maybe you decide to add another potato, the last minute suddenly you end up with five pounds of potato pancakes instead of two. That is where the sense of touch comes in. Also it's kind of fun to squash your eggs just every once in a while because as your adding ingredients you want to see how the potato pancakes are holding together. That is what the eggs and the flour are is their binders so that we can form pancakes instead of having hash browns. Which will not be the same with latkes at all."
