Potato latkes, also called potato pancakes or kartoffelpuffers, are made of grated or shredded potato mixed with egg, seasoned and fried in shallow hot oil. Latkes can be topped with any number of ingredients, but sour cream, cheese, applesauce, and sugar are popular condiments to add to a potato pancake. Though not necessarily Jewish in origin, latkes are often associated with Ashkenazi Jewish cuisine and are traditionally eaten during Hanukkah.

"Hi, I'm Jennifer Cail. On behalf of Expert Village I'm going to show you how to make a potato latkes for your Hanukkah dinner. The first step for making our latkes is to list the ingredients. Now of course the most important thing is the potato, now the potato being the most important part you are going to want a good, probably a russet something that is going to cook well. Something that is going to hold its shape in being fried. Not of course the shape of a potato but the shape once it's all shredded up. For something alternatively you can use sweet potatoes but for tonight I'm just going to show you a basic latke with regular potatoes. Also important a little bit of flour if you are making these for Passover instead for Hanukkah then you can use Masa meal instead of flour. You're going to have about 2 tablespoons of flour per pound of potatoes. Tonight I'm going to be using about 2 pounds of potatoes. Then you want eggs to help combine the latkes together you are going to have about 1 egg per pound of potatoes, it depends. Most important when you are mixing everything up is to use, you sense of touch see how things feel. You need salt and pepper this is what you are going to use for the potatoes and then the last editable ingredient is oil, lots of oil for frying. Because of course Hanukkah celebrates fried foods."
