Okay star the show or at least co star these are the chipotles and they are basically like I said there jalapenos and they have been smoked and they got some really nice heat to it. But we are just going to kind of rough cut these just like that cause these are also going into our meat mixture and this is where the main part of heat is going to come from. It is also going to give it a smoky flavor. So I guess I said earlier if you are making these for someone or some people who really don't like a lot of heat don't really make them this sausage. This is the point where you would cut back on the amount of chipotle that you add to your meat mixture cause this is where you main source of heat is going to come from and you can smell that chipotle and it is incredible. So here is our chipotles cut, we got all of our prep work done so now let's move on to our next step and start putting this together. "
