"Hello my name is Karl James owner of Creolsoul catering located in Round Rock, Texas and on be Expert Village I'm here to show you a chipotle hot sausage recipe. Okay now let's look at the meat that we are going to use. We are going to start with our pork and what we are going to use for this is something simple we are going to use some boneless country style ribs. I'm using them because of the fat content we need that in the sausage to keep them from being to dry and coarse. If you where going to make a lot you can get a lot of these or you can get you a nice pork butt or pork shoulder either one. You want to use a lot of the fat that is in there. I figure with the sausage we are talking about maybe 15% fat. So this is our first cut of meat once again the pork we are just kind of cut that into 1 inch pieces and this is some of that it would be easier for them to fit into our grinder. If you wanted, if you have someone and you where doing these and your purpose you where making them you didn't need pork you can always just use beef. We are going to do a pork and beef mixture. It is funny I do a shrimp sausage creole sausage and the majority is shrimp but there is also pork it there to add that fat cause your seafood is really not fatty enough so you add some pork or some fat in there to keep them more moist. Anyways this is our pork we would continue to cut that up and we would move on to our next step."
