"Hello my name is Karl James owner of Creolsoul catering located in Round Rock, Texas and on be Expert Village I'm here to show you a chipotle hot sausage recipe. Okay so we know that we added some red cayenne pepper to our seasoning mix and then we also know that we are going to add chipotle peppers to the sausage but just for good measure you want to be sure that it is hot we are going to add some Serrano peppers. So basically just cut those in half and just rough chop. Now this sausage may not be the fame of heart for those people that really don't care for anything to spicy or to hot. Normally I would tell you that you can cut back on this pepper, cut back on that pepper but rather then do that if you are making for people that really don't enjoy a lot of heat don't make this sausage make another one. Make something else. The purpose of this sausage is to be hot and have that kick it is the chipotle and all of the other peppers that we are putting in it. Except for the bell peppers they are pretty mild peppers so there is no heat there. But then even if you think about the garlic, garlic in itself is pretty spicy. Ever had any really nice garlic mashed potatoes? They have a nice little kick that would hit you on the back of your throat. Anyway we got our Serrano chopped and we left the seeds and the membrane it there we want all the heat that we can get from it and look more green. Anyway let's move on to our next step."
