"Hi! I'm Karl James owner of Creolesoul catering located in Round Rock, Texas. I'm here to show you a chunky chicken cacciatore. Well here we have our final dish chicken cacciatore it is a Italian dish like we said in the begin so you can serve it traditionally served over spaghetti or fettuccine. My roots being creole that means rice with everything, I have it serve over a bed of rice which works just fine so our chicken cacciatore which was really easy and simple to do. We basically took our chicken, cut it to bit size pieces, we brown the chicken in a seasoned flour and then we added our bell peppers, celery, onion, tomato, garlic, mushrooms. We got all those things simmering down and sweating down. We added our tomato sauce and our actual fresh tomatoes into that seasoned with a lot of oregano, some basil, some parsley, garlic salt anyway and we let that all cook together, simmer for about 30 minutes and here it is."
