"Hi! I'm Karl James owner of Creolesoul catering located in Round Rock, Texas. I'm here to show you a chunky chicken cacciatore. Okay now that we got our green bell pepper and or mushrooms cooked down we are going to add our tomato sauce to that and add about 2 cups. We are also going to add our tomatoes as well as the rest of our seasoning and we are going to mix that together. Now at this point if you want it to you can also add a little dry white wine or if you wanted to you can use a dry red it is all up to you it is base on your taste. Anyway we get this all mixed together the seasonings and we are going to let this simmer just a little bit maybe about 3-5 minutes just so the seasonings and all these flavors could melt together. And we got this in a middle heat and we are just going to leave it uncover right now. Now the thing is you really don't want it to reduce so if you start seeing it reduce you just add a little water, add a little stock it is up to you. Anyway we would let this simmer for the next 3-5 minutes and come back with our next step."
