"Hi, this is Josiah Owen with Expert Village. And today, we're going to be talking about how to cook pepperoni ziti for those on a diabetic diet. All right, now we're going to talk about go ahead and cooking our onions. I'm going to put a sauce pan on. I'm going to put about a quarter cup of our olive oil in there and let that heat up. You can see it's starting to heat up because it starts to thin out and it spreads really fast. Just move that around. I'm going to go ahead and add our onions. And right off the bat, I can go ahead and smell the olive oil and the onions cooking together. The onions are starting to break apart. Just going to cook this for about a minute. All right, now after our onions have broken up and starting to become transparent, we're going to go ahead and add our peppers right here. Drop those in. And this should be on medium, medium-low. And as you can see, most of the olive oil has been soaked up now by the onions and the green peppers. What's going to happen is there's so much water in the green peppers that it's going to start reducing down. And that's all the liquid we're going to need right there. Each of these steps is going to take about a minute. Just kind of a layering, building process. And make sure we don't cook these too long whatsoever. And make sure to keep on stirring as you go. All right, now after the peppers and onions have been cooking, we're going to go ahead and add our spinach. Five ounces of chopped spinach right there. Go ahead and stir that in. Now, if you decided to get the pre-cooked spinach, you would just throw that in there the same time you throw the garlic in, which would be our next step. Right now, we're having to cook this ourselves. So like all the other ingredients, we're going to cook this for about a minute because they're fairly small pieces. Don't want to go overcook anything. And while this is reducing, you can go ahead and get your garlic ready. And you see the pieces of spinach are starting to break down."
