"Hi, this is Josiah Owens with Expert Village and today we are going to be talking about how to cook pepperoni ziti for those on a diabetic diet. Now we are going to talk about shredding our Mozzarella cheese for our ziti. We are going to need about 1 1/2 cups of cheese. So we want to cut a hunk off and set it to the side. We have our cheese grater and we are just going to go up and down. This is going to make nice long pieces. You can also use a food processor if you want to but this works just as well. This is a different way that you can do this. If you wanted to I guess you can cut really thin pieces of Mozzarella and then cut those into smaller pieces. But this works well. One thing about grating cheese like I always say if you are going to grate it go ahead and grate extra so that way when you cook again you already have it premade or if you want a little bit extra later. If someone wants fresh mozzarella or cheese for there salad or what not they would have it right there. You just grate all the way down just make sure you watch your fingers at the very end. Put this to the side and there you go about a cup and a half of fresh Mozzarella. All right now we are going to talk about grating our fresh Parmesan for our pepperoni ziti. I'm just going to go ahead and cut a wedge off of here. We buy in bulk so just do that put that to the side and as you see we have this small edge of our grater. Not the big edge the big edge we use for our Mozzarella right now we use a really really small part. We are going to need 1 tablespoon of this. So we just cut off one little wedge you just want to go up and down and that way it would come out really thin and small. That is probably all we need but we are going to go ahead and grate the rest of this since we cut it. I'm just going to put it to the side and use for a topping or use it for the salad it is up to them. You can always keep fresh cheese grated on hand. Have a surplus waiting it would always fine a good home and there you go your fresh Parmesan."
