"We're going to make shark, blackened shark with zucchini and potatoes, pan seared potatoes. Over here is a seasoning, blackened seasoning. It has all the major ingredients to blacken anything that you could possibly want with the meat. So, right here we have a piece of shark fillet. You get it at the store. Basically what we're going to do, we're going to put it on. We're going to only use it on one side. We're going to try to press it and have all the seasonings on one side. When the pan is hot we're going to basically, we?re going to put the fish on one side. And then we're going to put it in the oven for two hundred fifty degrees for twenty minutes. Twenty to ten minutes depending on how fast you want it. I'm only going to put it in for seven to eight minutes at three hundred and fifty degrees because the fillet is pretty small so it will be faster to cook. Like you see, it's cooking already. We're going to put some salt on one side. Now we're going to flip it to the other side. (Off camera question: You're going to fry it for how long?) Yes. Thirty to thirty five seconds. Not more than a minute. That way it's going to get cooked. (Off camera question: Are you searing it?) Yeah, searing it off, yeah. Trying to get flavor off the blackening. (Off camera comment: ...and lock it in there.) Yeah. After that, after the searing ready, we're going to go ahead and turn off the pan. We're going to get rid of the excess oil and then we're going to add some white wine. See it boils up; about a cup of white wine. That's it, don't over do it."
