"Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on behalf of Expert Village I'm here to show you a spicy tuna tartare. Now we're going to prep our sauce that is going to mix in with our tuna and avocado. We are going to add a little rice vinegar to this, a splash of soy, a little bit of olive oil, a little ginger to that. I don't think I mentioned it earlier but just a little bit of ginger, we're going to add that lime zest, lime juice that we have. For a little more kick we're going to add some wasabi powder if you don't have the powder you can use the paste, but I prefer the powder. Add some heat to it and that seasoning mix that we mixed earlier, basically just mix this up really well. This is the sauce that is going to go right on top of our tuna and avocado and all those veggies that we chopped up. Okay, here is our sauce we're going to continue to mix the mixture of that paste and everything is all broken down and sort of smooth. I mean you're going to have those pieces of ginger and lime zest, that's not going to smooth out, but you'll definitely see when that wasabi powder is really broken down and mixed in. So we'll give this a good mixing and I'll see you back at the next step."
