"Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, TX and one behalf of Expert Village I'm here to show you a spicy tuna tartare. See we're anything but waist full here the same lime that we stole the zest from now we're going to steel the juice from and we're just going to use a little juicer here. Run it over and it will catch the seeds and let the juice run down into our bowl here and all we're going to use is the juice from one lime. There are other ways too that you can go about juicing a lemon or a lime but this is convenient for us here. Cause we have the little gadget to use it, you can just squeeze it, you can use a fork. There's a trick you can use to really get the juice out of a lemon or a lime is to stick in the microwave for about 10-15 seconds and then go ahead and juice it. It kind of softens it up okay, we got our seeds here, our juice here, worthless limes here we'll move on to the next step."
