"Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, TX and one behalf of Expert Village I'm here to show you a spicy tuna tartare. Now we want to take the zest from a lime and basically use a grater and just run your lime along the side and basically we just really want to get the green portion. You can smell that lime flavor we're going to use the zest cause it's a lot of flavor right there in the zest. I'm also going to use some of the juice but that zest has a really nice bite and we're just using a grater of the small side. Just running the peel that you zest it looks like enough right there and you can smell all that lime flavor coming through there. So theres our zest get this together and move it to the side."
