"Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and one behalf of Expert Village I'm here to show you a spicy tuna tartare. Okay, now we're going to cut up some chives that we're going to add to this and you may say to yourself "well green onions, chives they taste the same", a little bit different, the chives that we're using are garlic chives. So it's a little garlicky it adds its own little personal bite, its own personality, each item should have their own personality. So we get these nice and chopped and once again we're running that knife through just to get a fine minced, it looks good. We'll put them to the side and I'll see you at the next step."
