"Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and one behalf of Expert Village I'm here to show you a spicy tuna tartare. We're going to put the seasonings together and it's pretty simple unlike a lot of other things that I cook, I use a lot of seasonings. Here though we're just going to use a little black pepper, a little kosher salt, some of the creole seasoning just for some spice and a little cayenne for some heat. Now the cayenne plus the wasabi powder and those Serrano peppers is going to really increase that heat. So we got our seasonings mixed here and once again I like to premix my seasonings so once I get ready to use it I can just dump it in. I know what I got I can taste it and see if it's right, fix it right, now it has a little kick to it."
