"Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and one behalf of Expert Village I'm here to show you a spicy tuna tartare. Lets start out by looking at our ingredients for our spicy tuna tartare. We're going to use a little Serrano pepper, this is where we are going to get our heat from. We're going to chop up some red onion, chives, parsley, scallions (green onion) avocado, and zest some lime and use the juice from it. We're also going to use a little rice wine vinegar, olive oil, soy sauce, seasonings-some black pepper, kosher salt, creole seasonings for a little spice, cayenne for a little more spice, vegetable spray and that is going to go with the wong tong wrappers that we're going to crisp in the oven, and some wasabi. Plus, like I said the star of our show is the tuna and we're using yellow fin tuna which is a sushi grey of tuna. This is what you get when you go to any of your sushi restaurants and your getting tuna, this is it right here, yellow fin very good flavor. Anyway, that's the ingredients that we're going to use today, lets get started."
