"Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and one behalf of Expert Village I'm here to show you a spicy tuna tartare. Today we're going to prepare a spicy tuna tartare. Tartare what is it? Actually the tartare is basically a dish where you use finely chopped raw meat or fish and you can either add seasoning or a sauce to it and mix it together. It's normally served on toast wedges or in this case we're going to use some wong tong crisp makes good crackers. Which ever you like I like the wong tong crisp for it. The tartare has been around a long time in the late mid 20th century it started to fade away quite a bit. People were afraid to eat a lot of raw meat what happened in the 21st century beginning of it, it started to make a comeback. You're seeing a lot of dishes like in the "high end" restaurants, the steak tartare, the tuna tartare, salmon tartare, I mean they're just all these dishes. Like I said in the "high end" restaurants you'll now find it back on the menu, overseas you'll find it a bit in Europe they do a lot of the tartares. So what we're going to do we are going to put this together using a sushi grey tuna (yellow fin) actually it has the better flavor. We're going to put all this together add a little spice and a little pepper to it just to raise it up a notch and we'll get started."
