"Hi my name is Karl James owner of Creolesoul catering located in Round Rock, Texas and on behalf of Expert Village I'm here to show you a fried catfish recipe. Okay now that we got our dredged mixture all seasoned and ready to go we are going to take those catfish fillets and we are going to coat both sides with this flour and cornmeal mixture. I set them aside. Like I said we are using just a dry batter, just for a light coat. Play around if you know you want to use a wet batter give it a shot. If I doing things like a fish and chip style I will use a wet batter it almost like a tempura kind of these you just want it lightly coated. I like I said we are using catfish a lot of people really prefer tilapia go right ahead that should work just fine. Anyway we would continue to batter our fish here and we would be back with our next step."
