Preserving and preparing traditional recipes is an integral part of Italian-American culture. Mothers and fathers teach their sons and daughters how to cook food that their grandmothers and grandfathers ate in the “old country.” Since food helps keep Italian families together, the recipes tend to be rich and hearty, good for sharing with several people around a big table.
Stromboli is a dish best served piping hot, with cheese bubbling just beneath the surface. There are disputes as to where stromboli came from: some say the old pizza shops in Philly, PA; others say the Italian island of Stromboli. Either way, the result is delicious. The calzone-like food is made by taking regular pizza dough and filling it with various cheeses (mozzarella, romano), tomato sauce, and often pepperoni. Then the dough is folded over and sealed, or sometimes rolled, and put into the oven to be cooked like a pizza. When the stromboli is finished, it’s ready to be sliced up and served.
In these free cooking video clips, learn how to make a stromboli in your kitchen. Our expert will take you through four easy steps to this recipe, with tips for pouring the sauce, sealing the dough properly, and cooking techniques. Mangia!
"Hi! My name is Greg Goldberg on behalf of Expert Village. You can check us out at www.minettis.com. Today we are going to be talking about Stromboli, the close cousin to pizza. Again first thing is stretching the dough. That is what we are going to talk about in this segment. If you look over here, we have the dough already placed in the flour, smooth side up. We are going to give it a little press, flip, another little press and then we are ready; smooth side down. This time we don't need to press the dough out. Instead what we are going to do is get a rolling pin. I have one right here. You are going to go and start in the center, your hands flat and just work back and forth, back and forth until you have reached your desire touch. If you want to get it a little wider, give it one there. This does take a little bit of elbow grease here, just to get it rolling. Then what you can do if you want is grab, give it a little shape and that's the perfect size right there. "
