"Today we're going to talk about making Blue Mussels with a Sweet Vermouth Sauce. Ok this is pretty much rendered down right here. This is what you want about that much oil, you can see that. About that much oil right there but you just want to render it down just good enough. Stick it back on the fire, you've got your mussels right here. You want to go ahead dump those in, give it like a stir. Get that bacon like all over it, you know, you want to, it doesn't matter if you put it on the shells or not I mean the flavor goes right into it. I'm going to show you guys what I mean. And basically you're going to just like let it cook. You're going to wait for all these mussels to open up. Sometimes you can just go ahead and put a lid over it, I really don't plan on doing that today because it really doesn't take that long. It's just kind of like if you're an inpatient cook but as you can see they're already starting to open up. You just keep on stirring it, once you stir it a couple of times that bacons going to be like loosened up. Then some of the juices coming out of the mussels itself and it's just really easy to work with. This dish is super easy and I can see all the mussels opening up right now. That's definitely a good sign."
