"Hi my name is Gator Hillard and I'm here on behalf of Expert Village and today we're going to talk about making Blue Mussels with a Sweet Vermouth Sauce. Ok next up got the bacon cut, hot skillet. First thing I would do is I know that, that pork and beef provide their own oil, just go ahead and take a little bit of this olive oil and just stick it in there just to get it started up so that bacon won't stick on the bottom. What you want to do is make sure it's hot like I said, stick your bacon in there. What you want to do is you want to render it, render it, it's basically going to look like bacon bits or something when you're done, you know, that's the closest thing that I can tell that it's going to look like. It's going to stick a little bit on the bottom but that olive oil is going to help out but you want to make sure, you're sealing in like all that flavor. It's going to be stuck on the bottom of that pan it's going to be great you just go ahead and just scrape it up. I mean if you've got a Teflon pan, you know, and you got like a metal spoon don't do it. Go ahead and let that cook up for a minute, it's going to give you so much flavor when it comes to that mussel. Try and lay it out as flat as you can so it all gets like evenly cooked out as much as possible. Let it sit for like a second or two because it's not going to take long. Keep stirring it and make sure it comes off the bottom because all that flavor's coming off the bottom of that skillet. It's going to take about a, you know, five minutes, something like that, you're just going to have to watch it because you don't want to burn it but I would say it takes about five minutes to get this done before you can move onto the next thing."
