"So now that we have all of vegetables chopped up we are going to saute them on the bottom of our pot before we start adding the rest of our ingredients. So here I have all of our vegetables chopped up and we have most of a medium onion on like a rough dice. Then a whole green pepper, jalapeño pepper, a yellow wax pepper and then half of a poblano pepper. So we have our pot here, it is on to a medium heat. I'm just going to put some vegetable oil on the bottom of the pan or sorry on the bottom of the pot so I can saute the vegetables. I'm going to add a good amount because it kind of dissolves once we add everything. So I'm just going to add my vegetables. You just want to stir those up and this process lasts about like 5 minutes. You kind of want the onions to start turning kind of translucent. Already you got a really great smell just from these vegetables. So I'm just going to stir these around for about 5 minutes until I start to get a nice color on those onions. So our vegetables are about half way done in sauting, I'm going to put a little bit of seasoning. I have some chili powder I would probably add a little bit later to but I'm just going to put some in there. I kind of just eyeball it and you don't want to go over board cause once we have the beans in there we would be able to taste it and see what else it needs. Just in the beginning I'm going to put a little bit so we can add some flavors on these vegetables. Most of all I'm going to put in some generic taco seasoning which is basically cumin and a couple of other spices that are really good. One last thing just a little bit of garlic powder cause everybody loves garlic. You can also use fresh garlic and just saute it with these vegetables but garlic powder works just as well. So I'm going to let these go for just a few more minutes and then we would be ready to add the beans. Okay so our vegetables are done, they have cooked down a little bit. You can see the onions are a little bit translucent so that is what our saute vegetables would look like. "
