"Okay so now I'm going to mince a jalapeño pepper. Like I said before you can use which ever peppers that you like. Think about 4 jalapeño peppers with the seeds removed, it is still pretty spicy. So depending on how spicy you like it maybe you don't add these peppers or you do. But I like it pretty spicy so I'm going to do a couple of different peppers. First up is our jalapeño and to mince that I'm just going to take off the top like that and carefully slice it down the middle. So to remove the seeds I'm just going to take a spoon and get those out of there and you also when you are cutting these peppers be careful not to accidentally rub your eyes. I have done that before, it is not very pleasant. So I'm removing the seeds because the seeds is where a lot of the heat is. So sometimes I'm using 3 different kinds of peppers, I'm going to try to take some of that heat. So now I'm just going to make some slices of the length of the pepper. Try to make them pretty thin because you want to get the jalapeño almost to a minced because it is a hot pepper so I don't want anyone to get a big bite out of it. So I line up the slices and I just kind of do a fine dice on them. I would probably run through them with my knife to go even finer than that. Try to get any big chunks out. So that is one jalapeño seeded and a fine diced. Somewhere between a fine dice and a minced. "
