"Hi, this is Dave for Expert Village. Today we're going to make Cajun Grillades in a red gravy sauce. Now we're ready to saute our steak that we just cut into three inch cubes. You can use a cast iron skillet if you like I just have a regular one here it depends on what you have, it doesn't really matter. We just want to coat the bottom and I just preheated this a little bit, just coat the bottom of the skillet move that around make sure it's completely covered. You want to add our beef right in I can hear that's starting to sizzle already this is going to start the browning process on this meat and seal all the juices. It will give some extra flavor to this and the olive oil salt and pepper on the meat. So I like to begin with high heat and that is going to seal a lot of this in you can smell the olive oil, it's a good indication on how flavorful it's going to be."
