"Hi this is Dave for Expert Village today were going to be making some Cajun shepherds pie. Now we want to mince an onion we should just probably go with sort of a smaller dice to it. We don't want anything to big we want to make this into more like a meatloaf and then we're going to spread it out and see what the cajun shepherd pie is like. So as you see I've already taken off the skin into this onion and left the root on to here cause it's going to make it easier to chop. I'm going to cut this in half at this point cause it makes it a lot easier on your board when you just have it flat like this. And you can see it doesn't move around or anything you don't have to worry about cutting yourself. So then I like to run the knife down long way almost to the root just like that and then since we want a smaller dice we want to run our knife long ways down here 2-3 times. If you want a chunkier dice you don't have to do this many cuts in this direction but for the meatloaf part of this you want to kind of have it nice and fine. So as you see you go down the onion like this and the pieces are much finer."
