"Hi, this is David for Expert Village and today we are making Cajun ratatouille. Next up in our fresh herbs is oregano. All you do with this is just pull off the leaves. Just pluck those right off. Those little bitty stems are not going to hurt anything. We are going to chop the oregano. The thyme is already in small enough piece where you don't really have to worry about that. We would just take that right off of there. Again this is for demonstration what you want to use for the recipe that I gave you at the beginning for 6-8 people. Once you have your oregano leaves, again a sharp knife and this way it would not bruise and pretty much lose the flavor of the oregano. You see the knife slides right through. "
