"Hi, this is David for Expert Village and today we are making Cajun ratatouille. Next we are going to dice up a zucchini and I wanted to emphasis that you always want to use a very very sharp knife for this. It makes it easy. You think that a sharp knife is more dangerous. It is just the opposite the dual knife would be. A good friend of mine once said, that a dual knife a dual chef. I have always taken that to heart. So here is how you dice up a zucchini. So you want to take off from the zucchini like that and set that aside. Again in uniform dice, it is almost like the eggplant was, it is like almost like the eggplant was. So I just split them lengthwise, the diameter is different to split it to another bit unless you want to do a smaller dice. So that we have a flat surface again which is what you wanted. Then just run your knife through here pretty much like the eggplant. "
