Okay now that we have our eggplant peeled, we are going to cut this into slices and show you how to do that. Sometimes you will get almost like the eyes of a potato, you will get a part that you don't want in here so go ahead and just take that right off. We are going to get plenty of rings out of this. So go ahead and set that aside. Then what we want to do is cut this about quarter inch slices. You see there are seeds in there, no problem. Very soft and when they cook, you won't even notice then. So just continue to cut these uniformed slices, as uniformed as you can. That way they will cook at the same time almost like all the other veggies that we have gone over. You are going to get some smaller ones of course at the end toward where the vine was attached and that is fine too. They are all going to be laid out and we are going to show you how to do that.
