"Hi, this is Dave for Expert Village. Today we are going to make white bean soup with hamhocks and cornbread. Now that our hamhock has been simmering in with the beans and parting all its flavor, as you'll see the hamhock has fatter on the outside and then all that tender meat inside. So now that all the flavors out, we want to get rid of that fat portion. If some remains, that's fine to but I just kind of like to go around the outside like this and it starts to pull right off. If you don't get it right off, that's fine too. What we want to do is get that beautiful meat on the inside of the hamhock and we are going to reintroduce that to the beans. Just kind of go ahead all the way round here like that and it starts to pull off a little bit and we have a nice big piece here. You can just kind of cut down the sides of your hamhock. A lot of this will be gristle in here to. A lot of the reason for hamhock is flavor but there's this big meat in this area here, so you can go right down there. You see how pink that is. It's just like ham. Now that you have all this meat ready, just go ahead and put it right in the pot with the beans. Again, a lot of this flavor is already in the pot so go ahead and stir this together."
