"Hi, this is Dave for Expert Village. Today we are going to make white bean soup with hamhocks and cornbread. Another special ingredient that I like to put into my cornbread is these mild Ortega chilies. They are fire roasted and they add a great flavor to your cornbread. So what you do, is open these up to just a small can. These are a whole but they do come diced as well; I just prefer the whole type. I can cut them to any size that I want. Again, these are pretty mild. You can also use pickled jalapeƱo in here to which is an awesome flavor. But some people just don't like the heat, so you just take your chilies out, they look small on the top but I think two of these should be just plenty. Again for this size pan, these are fire roasted so they have a great flavor to them. They are peeled and ready to go. So I just like to slit them the long ways just like this; you can see how soft they are. Turn it this way like this and just run your knife this direction and you'll have a nice dice. You'll see a few seeds in there and that's just fine."
