"DAVID POSTADA: Hi. This is David for Expert Village. Today we're going to make one of my all-time favorite comfort foods, salmon cakes. Okay, so now we're going to make a beurre blanc white sauce with dill for the salmon. This is more-- instead of a making burger with it, you're going to put this on the plate and drizzle this over and the flavor is going to be outstanding. You're going to love this. So we what want to do is want to start out, get the pan hot, we want to add three tablespoons of butter to the pan, just like that. Get that melting and then what we're going to do with this. The beurre blanc--what you do is you make a roux, so we're going to add some one tablespoon of flour to it and then we're going to start whisking this into the sauce and then you'll see what we're going to do after that. So here is your one tablespoon of flour and since butter burns at a lower temperature just as we're talking about before, you want to start getting this whisked down as soon as you can. You still want the high heat and so just go ahead and whisk that, and you see it's kind a sort of making a kind of a thick sort of paste which is a roux and this is going to be the base to our sauce, so just keep moving with it. You don't want to walk away with this, so don't take any phone calls or anything else. Just go ahead and it doesn't--you'll see it take long to get going with this. So you want to get this a little bit quick. Keep moving it. Okay, then we want to add our milk, about one cup, and again don't leave this alone because this could really--could boil over so keep your eye on it. If you want to turn the heat down to about a medium as you stir this through. And you see up here it cooks a little while, it will start reducing down to get really nice and thick for you, and then what we want to do is add dill weed. Now this is as I said is a dry herb, so you don't need to have nearly as much of this. If you had fresh dill with you, that would be great. So we're going to just add, whatever amount you'd like, so like said this is pretty strong, but it's a match made in heaven, dill and salmon. This is perfect. You'll see this in a lot of Scandinavian cooking too, dill both with a smoked salmon and fresh salmon. So just mix this together. What we're going to do is let this reduce down to I guess it's sauce thickness and then I'll show you how to use this."
