"DAVID POSTADA: Hi. This is David for Expert Village. Today we're going to make one of my all-time favorite comfort foods, salmon cakes. Alright, so now we're going to shape our salmon patties. Okay, so I like about three, four ounces in here on each. So you just get hands there and make sure they're nice and clean. Go ahead and shape your patties just like that, show everything that's in there, and just kind of have it put it on the plate. See how beautiful that is. All the different types of textures in there with the green onions and the salmon and the celery and our seasonings and remember these are already poached with lemon and salt and pepper and wine so they're already going to have a great flavor all by themselves in the way we've seasoned them with salt and pepper, so just set them out just about like this, just continue until you're done. Now these are very rich, so one or two of these would be plenty. I think for anybody, especially if you're doing it as a burger which we'll show you pretty soon. But go ahead and just form those up real nice, just kind of pat them together and we'll go ahead and put those on the plate."
