"DAVID POSTADA: Hi. This is David for Expert Village. Today we're going to make one of my all- time favorite comfort foods, salmon cakes. Okay, we've got our salmon cake mixture almost ready now and what we're going to do is add a binder to this that really holds it altogether. So I just got a small bowl, I have an egg and I got a small whisk you can use any type of whisk you want or if you don't have one you can just go ahead and use a fork to beat this up. So I'll just get my one egg here, large egg, go ahead and break that right into the bowl. Well you want to get some air into this and it's-- that's going to be a great binder for this, so go ahead and break up that yoke. It doesn't have to get frothy, but you really want to make sure that you get all of the parts, the white and the yoke together in here. And then we'll be adding this to our mixture. And it's going to add yet more flavor, but again it's going to bind all the salmon and the celery and green onion and everything together here. And again, you don't have to have a whisk necessarily. It is great to have great kitchen item for many things, but you can also use a fork too. Okay, so now we're going to pour that right into our salmon mixture. Gonna add a lot of richness to this as well. Set this all aside and then just go ahead and fold this in. Like I said I like to have a lot of texture to my salmon cakes so I like to fold in the egg, so that it doesn't break up all the pieces."
