"DAVID POSTADA: Hi. This is David for Expert Village. Today, we're going to make one of my all time favorite comfort foods, salmon cakes. Okay, now you've gone the extra mile, you've made some fresh poached salmon. Instead of stuff from the can, they're really great. I put this in the refrigerator to cool a little bit. Now it's ready to flake into the bowl. This will be our first step into getting our patties going so we can cook these up and have some fresh salmon patties. You see, you simply just get your nice cooled salmon. This is already cooked right through just beautifully. So you just want to flake it right into the bowl, just like that. And as you see, we're going to have some great texture here. We could actually use a fork if you like it more smooth. Mine, I like to have a little more bite to it, but you can do whatever way you like, so just go ahead and break that right up into the bowl. Just like that, see how nicely cooked that is. It's not cooked too much, it's just perfect. So if some of the salmon gets a little too big for you in there, go ahead and just break that right up in our last little piece here. "
